New Executive Assistant Manager and Executive Chef appointed at Kanuhura |
Kanuhura, Maldives announces the appointment of Mirko Aru as the resort’s new Executive Assistant Manager and John Anthony Kotas Jr. as the new Executive Chef.
Italian born Mirko Aru has over 19 years experience in the hotel industry. He started his career as a Bar Supervisor at the famous Claridge’s hotel in London. After the very classic experience in London he headed out to Dubai and the Oman where he worked in many different 5* Hotels chains like Hyatt and Jumeirah until he became Director of Restaurants and Bars at the Grand Hyatt Hotel, Dubai – U.A.E. 5* and award winning Emirates Towers Hotel.
Mirko Aru felt in love with Dubai so he changed the hotel not the city and moved to the Madinat Jumeirah Resort – Dubai –U.A.E. 5* as their Director of Operations/Assistant. Director F&B. His last stop was his homeland Italy, Le Méridien Chia Laguna Resort in Sardinia where he covered the position of Hotel Manager.
Leading Small Hotel Kanuhura hired Mirko Aru as Executive Assistant Manager where he will be responsible for all F&B Operations.

On his part, John Kotas Jr. brings with him 37 years of culinary experience to Kanuhura. Born in Chicago, U.S.A., Chef John launched his culinary journey and career at a very young age. He apprenticed at the world renowned ‘Le Francis’ restaurant in Chicago and graduated from the prestigious Culinary Institute of America. John Kotas Jr. is a Certified Executive Chef and also possesses a degree in teaching culinary arts which has carved his career to success.
Chef John’s culinary journeys and experiences have brought him to corners like Mexico, the Caribbean, Europe, former Soviet Union, Asia, Africa, Middle East and now The Maldives. Rosewood, Relais & Chateau, Leading Hotels of the World, Sheraton Luxury Collection, to name only a few luxury hotels in which Chef John has left his footprints, cooking for guests across the world.

I have well noted how the hotel has won awards regarding food safety ver recently and I have great visions to share with our guests in the future,” says Chef John. His expertise and cuisine philosophy reflects light, flavorful, creative and healthy cuisine and he plans to implement fun and exciting culinary programs for hotel guests to enjoy in culinary competitions and seminars in the future.
John Kotas Jr. will oversee all aspects of food preparation and the menu creation throughout the restaurants and Villa dining, as well as for special occasions and celebrations that take place in the hotel. |
